3 large hard apples (grated)
1 carrot (grated)
1 to 2 mangoes (mashed)
1/4 lemon (juiced)
1 cup sunflower seeds
1 cup walnuts or other nuts (coarsely chopped)
1 cup carob
1 cup dehydrated coconut (shredded)
1 cup dates (finely chopped)
1 cup raisins
1/3 cup dried pineapple (optional; soaked 1/2 hour and cut into small pieces)
1/3 cup dried papaya (optional; soaked 1/2 hour and cut into small pieces)
1 teaspoon cinnamon
1. Mix thoroughly by hand. Press into a glass Pyrex loaf pan 1 1/2 inches high.
