1/2 bunch asparagus
1/3 cup fresh orange juice
2 tablespoons white wine vinegar
1/2 teaspoon brown mustard seed
1/4 cup olive oil
Dash of stevia (maple syrup, dates, agave, etc…)
1. Wash asparagus and trim ends. Using a vegetable peeler, peel the stems of the asparagus spears – starting under the bract. Save the bracts (tops) and set aside. Thinly slice radishes.
2. To make the vinaigrette, blend all ingredients in a blender. Store in an air-tight jar.
3. To assemble, in a large bowl, toss shaved asparagus, sliced radishes, coarse pepper, sea salt and vinaigrette.
4. Plate salad and garnish with asparagus bracts and orange zest.
Shaved asparagus and sliced radishes tossed with a mustard seed vinaigrette.
Dressing makes about 6-8 ounces.
