Recipe Directions

  • 1. Throw all ingredients in the blender and blend 'til they get alfredoey! It'll get really nice and creamy, so keep blending... And you're done!
  • 2. Serve over raw vegan "noodles!"
  • Raw Noodles
  • Of course, you know that raw "noodles" are simply spiralized zucchini or squash. (Or kelp noodles that you buy at a store.)
  • If you don't have a fancy spiralizer nor any kelp noodles on hand, just do what I do: peel the vegetable and discard the peelings. Once all of the tough peel has been removed, just use your vegetable peeler to make "noodles" out of the remainder of the vegetable. I usually discard the really seedy core though. Zucchini makes the best noodles.
  • I'd recommend zucchini. They have the best texture and their taste is quite bland and it takes on the sauce's flavour very nicely. But please don't use cucumber for the noodles! (Cucumbers are too wet; avoid cucumber noodles.)

The Rawtarian's Thoughts

By The Rawtarian

I miss cheese, I really do. But I tell ya, this raw alfredo sauce recipe has a cheesy, creamy texture that is oh, so alfredoey.

I can honestly say that I like this alfredo sauce more than SAD (standard American diet) alfredo sauce. HONEST!

If you've tried my raw mayonnaise recipe the taste is quite similar, although this alfredo sauce is quite garlicky, whereas the raw mayo does not contain any garlic. Enjoy this absolutely delicious alfredo sauce recipe.

This recipe is quite large, and it actually keeps in the fridge really nicely.

This recipe works best with zucchini "noodles" (see below for more info) or with raw vegan kelp noodles.

Toppings

Sometimes I top my alfredo sauce and noodles with vegetables. Your taste-buds will let you know what topping you might like to try on your pasta.

My husband prefers broccoli and red pepper. I love parsley, mushrooms, tomatoes, and olives. To each his or her own! Edit: Actually, I love black pepper and parsley and that's it! Simpler is better!

But for your first time just try it simple: raw alfredo noodles and sauce.

Hi Liz, most people find that having nut-heavy recipes for all meals is not well suited to the body and they move towards less and less nut-based recipes the more in tune they get to their body. For me, I usually have no nuts at breaky (usually a green smoothie), not many nuts at lunch, a heavier dinner (nut-based) and then sometimes a nutty dessert.

I'm not vegan, but just wanted a healthier version of alfredo sauce. I had it with regular pasta and put browned mushrooms on top. It was an absolutely amazing sauce! Great flavour and so quick and easy.

Love it, Ann!!

Cashews are a very exciting substitute for a lot of creamy recipes, like cheesecake, alfredo sauce, creamy soups etc.

Have fun and keep experimenting!!

With zucchini noodles - noodalized with a julienne peeler (not spiralizer). The texture was much better. Thanks again!

This is the first raw meal that I have ever made, so naturally, I was skeptical. However, I was pleasantly surprised with the results! This meal satisfied my craving for pasta in such a healthy way! And my munchkin and I loved making it together. She went back for seconds! Thank you so much for posting this recipe!

Glad you enjoyed, Deborah! One can never have too much garlic - well, in a recipe like this, anyway! Mmm nutritional yeast toppers... yes.

My husband and I are doing a week-long raw detox. This recipe is the first one we've found that isn't a misnomer...it actually smells and tastes remarkably similar to Alfredo. We'll be keeping this recipe in rotation even after our days of strictly raw are over. Delish!

OMG, made raw Alfredo sauce and now I'm hooked. It is so delicious that I put it on everything at the moment. I make a batch and put in a mason jar for the week. I will thin it with orange or lemon juice to use as salad dressing and pretty much dip everything in to it. Thanks for another awesome recipe!

This turned out amazing! Honestly, I didn't have very high expectations (no offense to Laura-Jane!) since it was my first time using nuts as a replacement for dairy, but this turned out so similar to the old alfredo I used to love that I was shocked! And best of all, a modest bowl of it didn't leave me feeling over stuffed and disgusting like the traditional alfredo sauce does. I added cherry tomatoes into mine, which I thought complemented the sauce great. I'm excited to have it as left overs for the next couple nights!

am half Italian ( my great grandparents are from Italy) and was very skeptical about raw Fettuccine Alfredo, but your recipe was so delicious that I almost cried being so overwhelmed with joy. I really missed pasta dishes and this is such a great replacement meal! I added black pepper and onion powder and left out the lemon because I didn't have any... DELICIOUS!
