1 to 2 bananas
1/2 cup cashews
1/2 cup dates (pitted)
1 teaspoon orange zest
1. Cut bananas across into thin slices (about 1/10" thick). Dry banana in the sun (if the weather is appropriate), or dry them in a dehydrator. Do not dehydrate them too much; banana slices should be sticky and flexible.
2. Process cashews, dates, and orange zest in the food processor.
3. Shape the mixture into 1" balls. Cover each ball with dehydrated banana slices (as by scales).
This dessert is a good source of Vitamin B1, Vitamin B6, Vitamin K, Potassium, Copper, Manganese, Magnesium, Iron, Phosphorus, Zinc, and Selenium.
