2 cups unsweetened coconut
1/2 cup almond flour
1/4 cup coconut oil
1/2 cup liquid sweetener of choice (clear agave, maple syrup)
1/3 cup blackberries (mashed)
1 tablespoon lemon juice
Few drops of lemon essential oil (could use extract)
Zest from 1 lemon
Dash of sea salt
1. In a large bowl, combine all ingredients.
2. Using a small scoop, scoop out mixture and place on dehydrator tray. Dehydrate for 4 hours at 105 F.
3. Check often to make sure not to over-dehydrate. Also, you could use your oven on the lowest setting, but check every 10 minutes not to overdry.
