Ingredients
½ medium butternut squash
½ small onion, chopped finely
½ bellpepper, chopped
½ cup red grapes, quartered
.125 cup sundried tomatoes, soaked and chopped
olive oil, to taste
lemon juice or vinegar, to taste
1 tablespoon curry powder
½ tablespoon cumin
1 teaspoon powdered coriander
nuts or seeds, to garnish
Recipe Directions
Peel and chop squash, and whizz in blender until it is grainy, resembling couscous. Fold in onion, bellpepper, grapes, sundried tomatoes. Add olive oil and vinegar to taste.
