Recipe Directions

1) Put agar agar into a small bowl, pour in water, whisk briefly, cover with plate and let sit while preparing other ingredients. 2)Take the coconut meat and dice it up into small pieces and put into blender. 3)Add cocoa, macca, and agave. 4)Take the agar agar and add to blender. If the mixture turned into a really thick gel I highly recommend adding a bit of water. If the mixture is still sort of liquidish you probably won’t need anymore liquid. 5)Blend mixture on your blenders highest setting for about 2 minutes or until smooth. 6)Scoop into container and put into fridge (though sometimes I get impatient and have some while it’s still warm hehe) until chilled and thick. 7) Eat!

This makes a delicious pudding for breakfast, dessert, snack, whatever! THis is by far my most favorite raw recipe! It also makes a great pie filling with various berries (strawberries, raspberries, blueberries, even pineapple).

the coconut meat is from 2 thai baby coconuts.

Is the coconut meat you're using from a young coconut or a mature one? I have to tell you, I don't eat sweets at all, but just looking at the photo might convert me! It looks so yummy.

about 2 cups of dehydrated coconut flakes should be the equivalent of meat from two coconuts. I would recommend soaking the flakes for a couple hours before hand, and while I'm sure that even with this variation the pudding will still taste delicious, it most likely wont be as smooth and creamy. It will probably depend on how powerful your blender is and how long you blend it.

That looks fantastic! You could also add some cordyceps, he shou wu(fo ti), and reishi mushroom powder.

I'd love to make this, but don't have any coconuts on hand. I do have some organic shredded and dehydrated coconut flakes though - would 2 cups of dehydrated equal 2 cups of fresh, do you think?

I would like to comment on the rating of one star for this recipe. Did somebody actually make this in the two hours its been posted, late at night? And why don't they comment on why they only gave it one star?
