GENEROUS HANDFUL OF FRESH MINT, DICED INTO ITTY-BITTY BITS
SLICE OF LEMON READY TO SQUEEZE
1 NICE APPLE, CUBED
½ POMEGRANATE SEEDS
COMBINE BEET, ZUCCHINI and MANGO IN LARGE BOWL. SQUEEZE BLOOD ORANGE OVER BEET, ZUCCHINI AND MANGO (THROUGH HANDS TO CATCH ANY LEFT OVER SEEDS) AND SHRED LEFT OVER PULP INTO BOWL. ADD MINT AND APPLE AND MIX. SQUIRT LEMON JUICE, ADD THE POMEGRANATE SEEDS AND LIGHTLY TOSS.
SWALLOW THIS RICH, RED DELIGHT CHILLED OR AS IS WITH LOVED ONES. SEEMS TO DO JUST FINE A FEW DAYS IN THE FRIDGE IF YOU WANT TO SAVE SOME FOR WORK/SCHOOL LUNCHES LATER IN THE WEEK.
I SMILE EVEN MORE WHEN I EAT THIS TOPPED WITH SLICED AVOCADO.
DELIGHTFULLY DARK RUBY RED DISH FOR SUMMER EATS OR DULL WINTER DAYS WHEN YOU NEED SOME COLOR.
