1 cup pineapple
1 cup cashews (soaked)
¼ cup macadamia nuts (soaked)
Sprinkle of vanilla bean or natural flavoring
½ cup coconut (dry or fresh baby meat)
1 cup Brazil nuts
½ cup walnuts
6 dried apricots (halves)
½ cup sweetener of choice
6 apple rings (dried)
½ cup pineapple juice
Garnishes of choice (pineapple, cherry, peach, more shredded coconut)
2 tablespoons cinnamon
1. Blend walnuts, apricots, 1 tablespoon cinnamon, and Brazil nuts in the food processor until fine.
2. Remove and mix in bowl with sweetener of your choice. Spread this in a pie plate.
3. Blend pineapple, dried apple rings, cashews, macadamia nuts, vanilla, and coconut with 1 tablespoon cinnamon and ginger in blender until smooth.
4. Pour into crust and freeze for an hour or two. Garnish as inspired.
