In addition to tasting good, it is also supposed to be super good for you.

Aubergines are supposed to be packed with potassium and also good for cholesterol, blood sugar, and hypertension.

Post-blending notes: The recipe (as above) comes out with a taste that reminds me of unsweetened soy milk.

I love eggplant and my favorite raw recipe is the caponata that you can find here, even my no raw food eaters coworker love it.

i don't think they are good to eat raw. But maybe if you soak them in salt water like you do before cooking, you can get some of the toxins out.

Hmm - I am a virgin rawfooder, so I will defer to any better knowledge on this. What I had read was that the leaves were dangerous, but that the fruit itself was fine. I am eager to know about this because I have a veritable stash of eggplants awaiting their new raw life in my tum.

I know that some people soak the raw fruit in water to get a drinkable tonic.

I also made a raw baba ghanouj last week (can't remember where I saw the recipe).

That would be a pity - if we cannot go raw with the eggplant... :-(((

One thing that I would change with the recipe (knowing a bit more) - is that I would not combine the almond milk (protein) with the banana(sweet fruit) in one recipe. According to my info, an acid fruit substitution would be better.

Wow - I don't think I ever would have thought to put eggplant in a smoothie! I loooove the taste of unsweetened soymilk! I will have to try this!
