Natalia Rose says:

Blend until very smooth. You may want to blend in a couple of ice cubes as well so that the mixture does not heat up while blending. The soup is best when served immediately, but it will last in the refrigerator for 2 days.

Kdaca says: Feel free to substitute the strawberries with another fruit and/or the agave for dates.

I skip the stevia because the berries and agave/honey make it sweet enough for me. Natalia says the beet root is optional.

OoOoOoO This is so good! I also make this often, about 20 minutes before dinner I'll have a big bowl. Also amazingly refreshing on a hot summer day! I haven't tried it with the beet yet but I bet that is wonderful!
