Delicious, moist walnut and date brownies from Jennifer Cornbleet. Keeps 1 week in the refrigerator and 1 month in the freezer.

Recipe Directions

1. Process walnuts in the food processor until finely ground. Add dates and continue processing until mixture sticks together.

2. Add cocoa powder and vanilla (optional) until evenly distributed.

3. Add water (optional) and process briefly.

4. Transfer to mixing bowl and mix in 1/4 cup dried cherries (optional) and 1/4 cup chopped walnuts.

5. Press in square container (like a Rubbermaid plastic sandwich container). Chill for at least 2 hours.

6. Top with raspberries or strawberries.

Jessica, If the dates aren't fresh, soak them for at least an hour and drain the water. They will blend easier with the nuts.

My version of this includes coconut (fresh or dried) and/or coconut water depending on how dry the content is. I may try adding spices during the holiday season. And sometimes I dehydrate for a few hours if it's too moist.

Are these dates dried or fresh? Most recipes don't specify and I guess that probably means fresh, but I have a large container of dried dates and wonder if I could use those instead? Any ideas?

i tried this and it was delicious. i ground cacao nibs to a powder (i thought it would be "wasteful", but actually it made quite a lot of powder). i would recommend using equal parts walnuts to almonds (you can get raw one online in bulk) though because the walnuts get quite greasy.

just wondering if carob powder would work instead of the cocoa?

i realize it would creat a different taste but?

This is taken virtually word for word from Jennifer Cornbleet's book isnt it? Im all for sharing recipies but I think we should give credit to the orignial author. However, I have to admit these are fantastic and the recipe certainly should be shared.
