Sweet red, orange, and yellow peppers
Juice from 1 lime
Handful of fresh cilantro (use less or more to taste)
1/4 cup cold water (use less or more depending on desired consistency)
2 teaspoons red wine vinegar
1. Blend avocado, lime juice, cilantro, water, vinegar, and salt in a food processor until smooth.
2. Drizzle dressing on salad and enjoy.
A spinach harvest salad, which was so yummy and much more filling then I expected.
