½ cup sunflower seeds (soaked 4 hours)
½ cup pumpkin seeds (soaked 4 hours)
½ cup whole sesame seeds
½ cup golden flax seeds (grinded)
5 cups buckwheat (soaked overnight and rinsed after)
1 tablespoon cinnamon
2 cups Medjool dates (pitted and cut into small pieces)
1. Put all ingredients in a large mixing bowl and mix well.
2. Spread on a teflex sheet about 1/2 inch thick. Dehydrate for 8 hours on 115 F and turn over on the mesh tray for another 2 hours.
These are great cookies--you just can’t stop eating them.
You can add any other dry fruit that you like (figs are a great idea), and you can add more spices like cardamom or anise if you like it more interesting.
You can serve it with a halvah spread on it. Just mix some raw tahini with honey or date honey (like in my picture).
