Ingredients
½ cup cashews, soaked 1 hr.
water
1 clove garlic
dash olive oil
Fresh or dried mint to taste
Salt, to taste (opt)
1 Large Cucumber
¼ red onion
cilantro, to taste, chopped
Recipe Directions
1. In a blender or food processor grind cashews. 2. Begin adding water until you achieve a yogurty consistency 3. Add garlic, olive oil, mint, and salt to blender/processor. 4. Chop cucumbers, onions, and cilantro and combine in bowl. 5. Pour dressing over cucumbers and mix until coated. 6. ENJOY!
Depending on how saucy you like your salad, you may have extra dressing. It is great as a dip for crackers or bread. Or spread on top of a portobello mushroom sandwich.
I didn’t try it, but I think avocado would be great in this salad.

I made this and it was really good! I added some dill and a bit of lime and cayenne. Very nice ....taste like it is full of dairy! Thanks

I made this tonight and loved it. I was craving some cucumbers, i added tomatoes, but that was all I changed. I try and follow the recipes the first time around because I am still getting use to cooking raw : )

Wow I love this! It is very much like a traditional Indian dish I used to make, this will be great with some raw Indian food!

Sounds great! And easy to prepare ... I like easy! :) Reminds me of a condiment you'd get at Indian restaurants. Thanks for sharing.
