Recipe Directions

1. Blend all ingredients until creamy in a food processor or blender (Even with my fancy schmancy Blendtec, I find this mixes better in my food processor!).

2. Eat as a pudding right on the spot and declare that you have seen the light

OR

3. Scoop pudding into ice cube trays and freeze. When it is hard, you can eat it like a mini popsicle or run the cubes through a champion juicer with the blank plate to create a soft serve ice cream.

This is an incredibly good dessert.

Durian is in season this time of year. Although this fruit can be expensive, unwieldy and has a somewhat controversial history, it’s something worth trying at least once.

You might even become fanatical about it like me!

Although I have not done it, you could probably blend the cubes in a high speed blender on the ice cream or smoothie cycle, perhaps adding a tiny bit of almond milk to aid blending.
