Recipe Directions

  • 1. Remove corn husks from cob. Slice the kernels off the cob by holding the corn cob vertically and carefully slicing down toward your cutting board.
  • 2. Add all ingredients (except the second amount of corn) into your blender. Blend on high until very smooth and well-blended. Blend for longer than you would blend a smoothie, because you want the soup to be warm when coming out of the blender.
  • 3. Pour chowder into a bowl. Add remaining corn and stir with a spoon. Garnish with pepper and chopped cilantro (optional).
  • 4. Enjoy chowder immediately, while still warm from the blender.

Try this satisfying vegan chowder when you want the creamy, comforting feeling of a bowl of thick warm soup.

If using fresh corn for this recipe, you’ll need at least three or four corn cobs on hand. (If you can’t get fresh corn, use well-drained, unsweetened canned corn.  (If using canned corn, rinse and drain corn kernels. Pat dry with a clean tea towel.) But it’s fresher and sweeter to use fresh, uncooked corn sliced straight off the cob.

Flavor tip: I normally add fresh garlic to my raw soup recipes and you may be tempted to do the same. However, avoid adding garlic because the flavors don’t go well with the sweetness of the corn.

This recipe makes enough for one large bowl for one person or two small appetizer cups.

FYI, if you don't add the cashews then don't add the water, it becomes... too watery and the garlic and onion (should you choose to use them) become overwhelming.

In other words, I was so happy about this recipe that I made another batch and added water and didn't like it :(

The first time I made this it came out too thin so I added more cahsews and more corn and it was perfect! Super yummy topped with lime cilantro hemp and cayanne.

I honestly don't think there would a single recipe on The Rawtarian that is not outstanding. This was simply amazing. And of course, I had to tart it up a bit. I doubled the recipe (for me and hubby) and added one deveined, seeded jalapeno. We are New Mexicans and like things with a zing. Garnished with cilantro. It was simply divine!

Now....this is way outside the box, but as I was eating this I got this brilliant flash. This recipe, minus the fresh kernals at the end, add maple syrup or agave to taste and nutmeg, thin as needed, do not blend to warm, and viola! EGG NOG!

My husband loves all your raw soup recipes. I love them too and find them so filling. I am usually good with one bowl of soup for the rest of the evening! This corn soup was SO different, subtle taste and didn't taste like corn, unexpected but delicious. I love the extra ideas here (curry powder, walnuts and almonds for a change of pace) and look forward to trying them!

Love this recipe so much! I've made it twice this week. Tonight I added a garlic clove, a pinch of crushed red pepper, and extra corn. Oh I was also out of cashews so I used Hazelnuts. So good. Thanks!

I used soaked almonds, frozen corn, and reduced the salt to 1/4 tsp. It was truly delicious! I will be making this again for sure!

This recipe is so yummy. It was the first raw soup I made, and I never thought I'd like cold soup, but this was so good. I added half a clove to a clove of garlic (it gets overpowered easily thought so be careful - especially if you plan to store for a few days in the fridge). I also topped with fresh dill and a sprinkle of paprika. So good!
