Ingredients
1 cup young coconut meat
½ cup cashews (soaked for at least 2 hours)
¾ cup water
2 tablespoons lemon juice
1 tablespoon agave nectar
2 teaspoons apple cider vinegar
¼ teaspoon sea salt
Recipe Directions
1. Blend all ingredients in a high-speed blender until smooth, adding more water as necessary.
2. Transfer to a covered container and allow to thicken in the fridge for several hours.

By CrisynThis is pretty close to commercial yogurt in texture and tartness.
I like to mix in some berries pureed with a little agave nectar, and sprinkle a little granola on top.

Mmmmmm, as a fan of Soy yogurt this looks like a delish raw alternative... can't wait to try it.

I'm planning on buying my first young coconut this week... I think this will be my first recipe to try it with! Yay! Looks VERY good.

This was really good. I spooned it on top of some strawberry & agave puree I blended up, and it was fabulous... and my husband liked it too!
