1 1/2 cups walnuts
1 1/2 cups pecans
1 1/2 cups dates
1 1/2 cup raisins
6 tablespoons raw cocoa powder
2 teaspoons pure vanilla extract
Directions
1. In a food processor, process nuts until they are very well blended, so that they look like a chunky flour. Basically, you should just see little chunky bits of nuts.
2. Then, add everything else to the food processor and continue blending. You'll probably want to add the ingredients one at a time otherwise your food processor might get all munged up.
3. Keep on blending until your mixture looks like a big ball of dough, like you can see in the picture. There shouldn't be big chunks of anything. You will probably see small flecks of nuts though.
As you can see, this recipe makes a lot of cake. You may want to halve this raw chocolate cake recipe if you have a small family.
Once you've got a giant raw chocolate cake dough ball, then the fun begins. You do not need to dehydrate this or anything, the cake is basically done now you just need to figure out the presentation (shape and icing or whatever you want).
5. Just press the dough into the desired shape for whatever you want to make. For example, just take a nice cake plate and press the dough into a cake shape. Ice it using your favourite icing, like in the picture above.
You could also split the dough in half and press half of it into a cake shape, add some fruit or icing or whatever on top of the first half, then put the remainder of the raw chocolate cake recipe on top to make a layer cake effect.

I think of this recipe as my base for being creative. I'll make up a batch of this raw chocolate cake recipe and then get creative by layering it with fruit, making cookies, or doing whatever I feel like.
This recipe does not have to be dehydrated. Just use your food processor and it's ready to go.
If you're looking for something sweet but don't want something as time consuming to make, try raw chocolate truffles instead. They taste rather similar.

Yes, I would recommend using raw organic cacao in this recipe. But if you don't have it at home, I'd just throw in the regular cocoa.
You could also use raw carob powder, but carob is not as flavourful as cocoa so you'd want to replace one part cocoa with 2-1/2 parts carob powder.

I haven't had much luck with raw icings, to be honest. I tend to dislike raw icing recipes that use bananas (even though I love bananas in general). Banana-based icings discolor and get kind of slimey after the first day, in my opinion.
I have a nice white icing recipe that I haven't tried yet that uses lecithin granules to make it fluffy. Once I make that, I'll review it. I don't tend to make many cakes because we are a small household and raw cakes are so dense.

I don't know if it would work the same, but my FAVOURITE raw dessert is Chocolate Mousse:
1 avocado
1-2 tbsp raw cacao powder
1/2 tsp cinnamon
2-3 tbsp agave nectar
A dash of vanilla essence
Splash of water
Blend it up to the required consistency.
I thought I'd mention it, as MAYBE, if it were really thick (TINY splash of water! Or mash the mixture rather than blend) it may suit to put on the top of a cake. I might be wrong though! But if it doesn't work out, it's still yummy!

Have you tried blending a ripe avocado and mango together with cacao?!!! If not you should....no sweetener needed as mangoes are generally sooo deliciously sweet! This is my go to mock chocolate mousse!!! Let me know what you guys think!!!

I'm a newbie raw foodist. Yesterday was my birthday I just couldn't go without a chocolate cake. Although I was skeptical I LOVED IT! I made a raspberry sauce to go over top (raspberries, agave syrup, and fresh lemon juice in a blender). YUM!!! Even my husband liked it. He thought it was a little like brownies.

I just made this delicious cake (so easy!) and then decided to make it orange and chocolate flavored by adding the zest of 2 oranges and the juice of one. Gives it a lighter and brighter taste. I plan to use your Raw Fruit Dip as the frosting, which I dyed green with a bit of spirulina! Thanks! This will be the perfect cake for my friend's going away party (he's moving to a farm on Kauai).

Just two days ago I made your raw chocolate cake and decorate with the raw chocolate icing as a birthday cake for my friend who is on a raw diet. I cut down a little bit of the dates and raisins as my friend does not take too sweet. Everyone at the party loved it. I have been making vegan cakes and special diet cakes for people for quite a few years. This is my very first attempt making a raw cake. I absolutely love it. The recipe is simple and easy. Made this cake for my wife's birthday yesterday. It was my first time ever making a raw cake, it was so easy and came out great!
I made two layers, pureed some organic frozen raspberries and a little agave for the middle filing and placed the 2nd layer on top. Made your raw frosting (which was also very easy to make and took very little time), added 2 tbs of coconut flour to thicken it up. My wife (who has made a lot of vegan cakes), loved it! Thank You!

dry nuts - can be turned into flour in a food processor
soaked nuts that are wet - will NOT process well in a food processer - they won't turn into flour, they will just kinda bounce around and because they are wet they won't grind up properly

I wonder if you can also substitute cacao nibs instead of cacao pawder. It is probably a silly question but I am looking for ways to re-use my leftover nibs from my brewed Choffy. Any suggestions? Much mahalo.

Delicious! I soaked the walnuts because they're quite bitter and it turned out fine. Haven't iced it yet, I think I'll just drizzle some cacao powder mixed with coconut oil for a more chocolaty flavor ;)
