Ingredients
Liquid

1/2 Tsp Lemon Juice (for the sauce)
Filtered water, as needed for desired consistency (use your soaking water first)
Veggies/Fruit
-------------------
1 ZUCCHINI per serving (spiraled into pasta noodles)
2 ROMA TOMATOES
10 SUNDRIED TOMATO pieces (soaked)
1/3 of a RED BELL PEPPER
1-2 DATES, per desired sweetness (soaked)
Nuts/Seeds
----------------
2 TBS Raw Sunflower Seeds, for creaminess
Spices
----------
1 Tsp Herbs de Provence
1 Tsp Oregano
1/2 Tsp Onion Powder (or Minced Onion)
1/2 Tsp Garlic Powder
Crushed Red Pepper, to taste
Recipe Directions
1) NOODLES: spiral the zucchinis and spritz with lemon juice and/or sprinkle with a pinch of salt--let sit for at least a half hour to soften (longer is better)
2) SAUCE: blend the tomatoes, sundried tomatoes, red bell pepper, dates, water, lemon juice, sunflower seeds and spices in a blender.
3) OPTIONAL: mince some additional veggies (red/green bell pepper, carrots, zucchini, other) and stir into sauce for a chunky version

By ggThis is a traditional marinara sauce with the addition of dates to give it a mild sweet flavor, and some sunflower seeds to add creaminess
