Recipe Directions

  • 1. Place almonds in food processor. Process until very fine - slightly coarser than flour. You are making almond flour! Will still have a few small chunks, but that's ok.
  • 2. Place "almond flour" into large bowl. Add everything else except raisins. Stir with spoon until well combined, resembling cookie dough.
  • 3. Add raisins and stir again until will distributed.
  • 4. Place bowl in fridge for one hour. Once refrigerated for one hour, mold into cookie shapes. Serve immediately.
  • 5. Store leftover cookies in refrigerator. (Cookies are best served right out of fridge, otherwise they will crumble.)

Try these refrigerator cookies with a tall glass of chilled cashew milk. Just like grandma used to make!

As written, these cookies are super sweet. Ease up on the honey - start with slightly less than the called-for measurement.

As with many of my recipes, the coconut oil is extremely important for hardening this recipe. Do not omit.

Oh my sweet Lord, this was such a mouth watering, awesome dessert! It is so gooey, lovely, tastes actually like nuts, but the base of it is almond, very interesting! You're the queen of these healthy desserts! My parents are pretty much against anything that does not contain normal sugar, but my dad loved it so much! I love creating your delicacies and appreciate these useful ideas! At the moment I am gobbling your "raw yoghurt" as my breakfast. Warm greetings from Budapest, Hungary:)

Flavour of my mums walnut Xmass strudel...took me back to my childhood,thought I will never taste it again and thanks to you, miricle happend and here it is...My favorit Xmass treat... And raw...
I bought 36 kg of fresh dates, so I put 9 dates instead of honey,the result was to die for...
I thought to improve it even more and I replaced almonds for walnuts...not a good idea! Tasted still very good, but as you explained in your nut replacement video, the walnuts are oily and cookies were very soft...too soft..
Anyway.. Theese are my faverit cookies so far...

It's too bad that the almond substitution didn't quite work out for you, but the plus side is that you'll know next time to use walnuts (or pecans, which have a similar texture/oiliness)!
