Raw mayonnaise recipe
3/4 cups water (or less)
1 1/2 cups of macadamia nuts (expensive but worth it)
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 teaspoon italian spices (basil, thyme, oregano or combo of all - whatever you have)
1/2 teaspoon sea salt
dash of cayenne

Directions
1. Throw everything in the blender and just BLEND until smooth!

I don't make recipes with macadamia nuts very often because they are rather expensive, but this raw mayo is totally worth it.
It's light, fluffy, and subtly tangy. It's also very rich. Mmm!
My husband is a purist type, and he doesn't even like this raw mayonnaise recipe because it tastes "too much like mayo." But I love it for that very same reason!
I definitely recommend this mayonnaise recipe. It's a must-serve when making raw veggie burgers.
My blender is pretty crappy, and I was worried that it wouldn't blend the macadamia nuts, but they blended well.
I'll be serving this on veggie burgers, using it as a dip, a spread, etc.
My expectations of this recipe were pretty low because I have tried some recipes that have GREAT names but taste nothing like their names. For example, I recently made "seed cheese" and it tasted nothing like cheese. But behold the power of the raw mayo!

Hi Laura-Jane,
I finally purchased a Vitamix a few weeks ago. I was so thrilled with my
"new green smoothies" ! So much better than the old blender.
Next on my list is dehydrater. Excalibur. Finger crossed. I
will then try your mayo on veggie burger.

Yes, they do cost like $500 but they are WORTH IT because the texture you get will be so silky smooth you can never go back to normal blender after having one
PS: YOu do NOT need to buy an expensive dehydrator or even an expensive food processor. Just get cheap ones and SPEND ALL YOUR MONEY ON THE VM

Ooh, you have a Vitamix (lucky gal)! I think it's kind of funny that you chose to get a better blender first, and I chose to get a dehydrator first.
I've got a date in my head that if I make it to six months raw I have totally earned a Vitamix. Most people would get one earlier, but I am very thrifty. :) Do you have a timeline for getting your Excalibur, I wonder?

I am going to try this recipe today but my store does not carry any macadamias so I will try all cashews. Hope it turns out ok. I am a vegan (10 years) and just learning about raw dishes. I am going to try the lemon cookies and alfredo sauce too. Thanks for posting these recipes.

My guess is that it will work out fine with cashews. I frequently swap the two nuts in recipes depending on what I have on hand and price. Did you try the recipe with cashews, VeganShine? If so, what did you think?

Yep, BlendTec and Vitamix are the big two blenders. I have a Vitamix, but I am certain the Blendtec will be great for you. Good luck!

I've been searching for a good raw mayo recipe for ages. This one is PERFECT. I did add a couple of drops of stevia because I'm more of a Hellman's girl (sweet) rather than Miracle Whip (too tangy for me). Anyway, this is going to be my staple mayo recipe for sure, thanks so much!

Haha, no, I didn't make the bun in the photo. That photo was taken at a raw food restaurant. I don't have the patience to make anything so nice looking!!
Does anyone have any good "burger bun" recipes?? I have lots of bread recipes, but nothing that would go well with a burger. I am sure a recipe exists though.

The store bought vegan mayonnaise i have at home was about to finish and i could not find more of it so I tried this recipe with cashews and lemon instead of the vinegar but kept the proportion same. It actually tastes like mayonnaise. (I actually compared it with the left over store bought one!!!) You're great!! :D

It certainly won't last as long as regular SAD mayo that's for sure :)
But seriously, I would give it a week or less... Probably more like 3-5 days. Hope that helps!

I just made it a few minutes ago. I don't think it tastes anything like SAD mayo. Hmmmm... The end product is good but something I wouldn't want to use nuts for. Am I the only one that didn't end up with something that tasted like SAD mayo? I am honestly tired of using avos for everything to make a "spread". Help, please!

That's too bad that this recipe didn't work out well for you. Did you use a high-speed blender?
Also, do you have a food processor? If you soak your nuts and use good equipment your spreads should come out tasting or having the texture of nuts at all.

Ideally you could soak for a minimum of an hour and then rinse clean.
You don't have to soak them if you have a high-speed blender, but it is a good idea for this recipe.
PS: If I am in a rush or impatient I wouldn't soak with this recipe. Just being real here!

Agreed, not over-hyped in the slightest! I made this with your onion bread recipe and wowza were the flavor combinations incredible. I love raw food, the flavors are so alive!
Ok, for the mayo, the only adjustment I made was adding half a cup of pine nuts and that was because I had soaked too much for another recipe and needed to use them. For the Italian seasoning, I didn't have any and used a couple shakes each of oregano, thyme, basil, and rosemary.

I love this raw mayo. I've made it a few times and eat the crap out of it! Thanks so much. I'm probably going to crush the nuts with a hammer before throwing the ingredients together to blend next time. Maybe my processor/blender doesn't blend too well or maybe I just want to smash nuts with a hammer, who knows? But I feel like the mayo would be extra smooth. I thank ye again, sweet Rawtarian!

Hi,
I recently found your site and am Thrilled with the recipes I have tried so far...my 3 year old daughter can't get enough of your lemon cookies and they turn out fabulous when pressed with cookie cutters :)
I would like to try this mayo with some veggie burgers tonight, but I am out of apple cider vinegar. Any suggestions on a good substitute or must I run out and get the real thing ?

Hi!!! A french contribution to this mayo test... delicious, absolutly delicious, I had no time to soak macadamia, but with just half a cup of water in my vitamix it came out perfectly. I did your mayo recipe to add to my grounded celeriac and I added lemon juice (half a lemon). Even my son 16 years old found it really good and even said "better than organic normal mayo" (the one kids have in the fridge) Thanks, thanks very much. I'm someone cooking almost one of your recipe per day!!!! And they are all perfect!

No, do not freeze. It will not thaw properly at all.
If you have leftovers dehydrate them in little thin rounds. Store in dry place. Crumble like parmesan cheese over soups or salads
