I don't make recipes with macadamia nuts very often because they are rather expensive, but this raw mayo is totally worth it.

It's light, fluffy, and subtly tangy. It's also very rich. Mmm!

My husband is a purist type, and he doesn't even like this raw mayonnaise recipe because it tastes "too much like mayo." But I love it for that very same reason!

I definitely recommend this mayonnaise recipe. It's a must-serve when making raw veggie burgers.

My blender is pretty crappy, and I was worried that it wouldn't blend the macadamia nuts, but they blended well.

I'll be serving this on veggie burgers, using it as a dip, a spread, etc.

My expectations of this recipe were pretty low because I have tried some recipes that have GREAT names but taste nothing like their names. For example, I recently made "seed cheese" and it tasted nothing like cheese. But behold the power of the raw mayo!

Haha, no, I didn't make the bun in the photo. That photo was taken at a raw food restaurant. I don't have the patience to make anything so nice looking!!

Does anyone have any good "burger bun" recipes?? I have lots of bread recipes, but nothing that would go well with a burger. I am sure a recipe exists though.

Anyone?

I've been searching for a good raw mayo recipe for ages. This one is PERFECT. I did add a couple of drops of stevia because I'm more of a Hellman's girl (sweet) rather than Miracle Whip (too tangy for me). Anyway, this is going to be my staple mayo recipe for sure, thanks so much!

Hello,
I have been thinking of buying BlendTech. What do you think of that choice?
Apparently the newer one with 4 inch blade is pretty good.

I actually chose the Blendtech over Vitamix after much research and seeing both in use. The deciding factor for me was the Wild Side pitcher with the Blendtech. You can fill this thing to the very top and never, ever have to tap down. You fill it, push the pre-programmed button, and walk away. It has something to do with the angle of the sides or, I don't know exactly what, but that was a really big thing for me.

Yep, BlendTec and Vitamix are the big two blenders. I have a Vitamix, but I am certain the Blendtec will be great for you. Good luck!

My guess is that it will work out fine with cashews. I frequently swap the two nuts in recipes depending on what I have on hand and price. Did you try the recipe with cashews, VeganShine? If so, what did you think?

I am going to try this recipe today but my store does not carry any macadamias so I will try all cashews. Hope it turns out ok. I am a vegan (10 years) and just learning about raw dishes. I am going to try the lemon cookies and alfredo sauce too. Thanks for posting these recipes.

I don't think you over-hyped this. It is terrific! I actually used 1 cup of macadamias and 1/2 cup of cashews and it worked great.

Ooh, you have a Vitamix (lucky gal)! I think it's kind of funny that you chose to get a better blender first, and I chose to get a dehydrator first.

I've got a date in my head that if I make it to six months raw I have totally earned a Vitamix. Most people would get one earlier, but I am very thrifty. :) Do you have a timeline for getting your Excalibur, I wonder?

I finally purchased a Vitamix a few weeks ago. I was so thrilled with my
"new green smoothies" ! So much better than the old blender.
Next on my list is dehydrater. Excalibur. Finger crossed. I
will then try your mayo on veggie burger.

Hi Jo, I just got my Vitamix about a week ago. Got it through Costco.ca. No shipping cost and it was $499 plus HST.
YES, WORTH EVERY SINGLE PENNY!!! :)

You can call the company and get a refurbished one for about $100 cheaper and they still have the warranty.

Yes, they do cost like $500 but they are WORTH IT because the texture you get will be so silky smooth you can never go back to normal blender after having one

PS: YOu do NOT need to buy an expensive dehydrator or even an expensive food processor. Just get cheap ones and SPEND ALL YOUR MONEY ON THE VM

Laura- Jane - I love your work, thank you for your passion I know I speak for many when I say it is appreciated! :)

I just wanted to jump in and add a comment about the high powered blenders!

Over here in Australia a VM is about $800 by the time you cover postage so I recently purchased an Optimum Blender! Its superb. It cost about $650 including a 7 year warranty. I had no idea a high powered blender would make SUCH a difference! So anyone whos looking for a vitamix or blendtec but cant afford it or just enjoys saving money, check out the Optimum and see if its for you :)

I did some research when I bought my Ninja. Ranked equal with the Vitamix. I am VERY happy with the results.
