Recipe Directions

  • 1. Add all ingredients into large bowl except the shredded coconut.
  • 2. Stir with spoon until well mixed.
  • 3. Once combined, add shredded coconut. Stir again until well combined.
  • 4. Drop cookies onto a cookie sheet. Cover and freeze for at least 30 minutes. (Cookies will harden when cooled.)
  • 5. Store leftover raw vanilla drop cookies in freezer.

No equipment required! Which means less dishes to clean, which is always a good thing!

Best served cold, straight-out of the freezer because coconut oil will liquify again once warm.

This recipe makes approximately 15 drop cookies. These are super sweet and rich, so just one after dinner does a lot to satisfy that sugar fix!

Please note: the tahini is definitely the secret ingredient in this recipe. So do not try to substitute it with anything. (And do NOT use sesame seeds instead of real oily/liquidy tahini! The texture will be all screwy and not good if you do that. For realz!)

These are excellent & VERY easy. My husband likes them as we'll. I added a little wheat germ & flax meal to the second batch I made & couldn't tell any difference. Reminds me of a Samoa Girl Scout cookie.

These are sinfully rich and delicious! I'm not a tahini fan so I was very skeptical that I'd like the taste, but they're fantastic. I agree with Ginny who commented that it has a rice krispie taste.

Though they would've been great as-is, I personally added sorghum flour and then added more maple syrup/salt: this added bulk, and cut down on the fat per serving (ok, namely, I had sorghum flour that I needed to use). I could also see mixing in oats to achieve a similar effect. It's a super versatile base, so there are many possibilities! Lovely recipe. Another winner.

Hi Catherine,

I feel you on the tahini factor. It is pretty bitter and odd tasting on its own, but you can't taste it in this recipe at all - although its creaminess is absolutely necessary for this recipe. It's kind of like traditional dairy butter - not something you want to eat on its own, but definitely a delicious addition!

Genius idea about the sorghum flour - I've never used it, but I love the idea of bulking it up with lower calorie ingredients.

Keep the ideas coming!

I consider this more of a macaroon than a cookie drop. That said, the flavor is good, but there's too much sugar in this recipe for my liking. My reason for seeking delicious raw vegan desserts is to avoid refined flour and sugar. In my second attempt at this recipe, I substituted one cup of shredded coconut with one cup almond meal, decreased the maple syrup to 1/4 cup and added raw chocolate bits. Your raw vegan brownie recipe is still my favorite :)
