This walnut-based raw taco filling is an excellent, hearty vegan topping for tacos or a taco salad. It keeps in the fridge extremely well for up to 4 days. A food processor is required.

This recipe is an excellent, hearty base. It’s a perfect addition to a whole foods vegan meal because it adds a heartiness and depth that’s hard to get without faux meat soy products.

This recipe calls for sun-dried tomatoes that have been soaked in oil. Usually, you will purchase them pre-soaked.

If you don’t have walnuts, pecans will work equally well in this recipe.

As you can tell by the ingredients, the size of this recipe is quite small. Double up as necessary.

This raw taco meat recipe has been an excellent, hearty base and my husband loves it--more than I do, even. I often spread this recipe on romaine lettuce, and I top it with tomatoes and fresh sprouts. Sprouted adzuki beans go surprisingly well with this recipe. It's a perfect addition to a raw meal because it adds a heartiness and depth that's hard to get on a raw food diet. I have been a vegetarian since 2001. Once I went vegetarian I immediately replaced meat with soy products. One of the most difficult parts of my transition to the raw lifestyle has been to give up the soy and tofu products that were staples in my husband's and my diet. I seem to like small recipes because I am thrifty and I want to try a small batch before I invest 2 cups of this or that into a recipe that doesn't turn out well.

Hmmm, smell of sundried tomatoes.... Perhaps you can use the ones that have been soaked in oil first, they don't smell as bad.

Lettuce wraps, very simple. I just lay out a big piece of romaine, fill it up lengthwise, and then close it lengthwise and gobble it up!

It was awesome but I hate the smell of sundried tomatoes! Do you have any idea what to do about it? And how do you wrap the lettuce?

Shouldn't the walnuts be soaked to make it easy to digest?

Hi Stephanie,

I do not recommend soaking for this recipe.

However, you can soak them in advance if you prefer or if your stomach is sensitive to nuts. Be sure to drain and pat them dry before using, as you don't want much extra water to be added into the recipe by using wet nuts.

Hi Conrad! It kinda needs some kind of oil to keep it together... you could do olive oil or coconut oil or... reduce it a bit? But I'm going to say that it does need the oil, otherwise it just won't be the same.

It was very good but even better when you have avocado, green onion, tomatoes and jalapeno. We made it wrapped in butter lettuce like tacos with a raw cashew cheese sauce. We will deff make it again.

Your picture and texture looks crumbly like taco meat. Mine is all clumped together. Any suggestions on how to get it crumbly?

Aah yes, this is simple! Next time, do not process it for as long.

(More crumbly = shorter processing time.) (More moist and sticky = processed too long)

My Husband keeps asking me.. "So there is NO meat in this?"
I'm not sure what moved me to start eating raw but I knew there had to be someone that had great tasting recipes!
Alas, I found myself at your site and I made over 10 of your recipes over the course of a week or so and they were so good. Also important (kind of):) Is my husband has also enjoyed them tremendously! Oh, and that sweet potato noodles with mushrooms recipe?!! Amazing. Thank you.

Fantastic!! I added cumin, garlic, and a chunk of jalapeño. Served with cilantro, avocado and limes! Amazing.

Hi! Can you eat pecans?? If yes, then you can use pecans instead of walnuts in, well, every one of my recipes!!

I would love to make this recipe, but my husband can't have tomatoes, or peppers and no night shade vegetables, what can I substitute for the tomatoes in your recipes. I'm dying to try all your recipes with tomatoes but I'm stuck on what I can use instead of tomatoes. Can anyone suggest a substitute.
