The Rawtarian's Thoughts

By The Rawtarian

You haven't lived until you've had this raw cream cheese icing recipe with a big, nice slice of raw carrot cake!

Note that it's the coconut oil that will help this raw cream cheese recipe firm up, so... don't omit it, ok?

The icing will get softer and more gooey (gooeyer?) once it warms up so it's best to ice and then eat right away. Or store your entire cake in the fridge and then cut slices right away.

Enjoy this raw cream cheese icing recipe!

This was absolutely amazing! I used it on a "regular" vegan carrot cake - amazing! I couldn't stop myself from licking the Vita Mix, haha.

Hi Cupcake! This icing isn't the best for piping. Try my chocolate icing instead :) https://www.therawtarian.com/raw-chocolate-icing

I just made your carrot cake. It is delicious. What I really like about these recipes is not so much that they are raw. Sugar is raw LOL. But the ingredients are healthy too, and yet they taste so bad for you :D

Hi!

I am a big fan of raw cashew frosting for cakes, however I am having a friend over that is allergic to cashews, walnuts, peanuts (most nuts), but he can eat pine nuts. I really don't want to spend the money on a bunch of pine nuts if it won't work out...do you think it might still be good? Do you have any other ideas?

Thank you!

Hi Jessica,

Yes, I would agree that the pine nut idea would work, but it would be like $20 lol

I suggest doing a banana, coconut oil, lemon juice and sweetener icing instead

Should the cashews be soaked for this recipe?

I made dehydrated carrot cake style crackers then added your cream cheese icing and redehydrated the crackers. They turned out great! My husband liked them so much that he ate an entire tray full. So I guess I'll have to hide them and ration them out to him LOL! Thanks for the great recipe and I can't wait to try the chocolate cream cheese.

Hi! Made your non-dehydrated carrot cake, and was about to make the frosting - are the cashews soaked first? I have a vitamix, so they shouldn't be a problem, but just wondering. Thanks!

I love all of your recipes. I am happy to say that as of October 5, 2012 that I have gone completely raw. I am confident that I can now hang in there for life after finding this site. Thanks for the wonderful insight and great recipes. What is the best food dehydrator and food processor to purchase in making such delicious recipes?

These might help -

My recommended resources: I recommend Vitamix for blender, food processor blend is not as crucial http://www.therawtarian.com/recommended-raw-food-appliances-and-specialt...

Just came across your site. My 11 month old was just diagnosed with a Milk and Dairy allergy so I am new to all of this. Looking to learn how to change over some of my dairy recipes to vegan.

I am certainly going to give this recipe a try. Can you tell me how much it makes?

Maybe 1.5 cups? Not enough to ice a normal, large huge cake. You might want to double or triple if trying to use like a Standard American Diet icing

So so delicious. I just made this for the first time and it was so fast, simple and delicious. I just made some regular carrot cake for my kids (with out eggs because I found out I'm allergic to eggs and dairy) and wanted to have one so I made this icing for myself. My whole family wants this on their cupcakes instead of store bought frosting. Yeah for me. :)

I believe it works with pine nuts - I once used half'n'half pine nuts and cashews, and it worked out marvelous.

That is a great Idea Leonie. I think I will be surprising someone with this on Valentine's day as well. and this icing looks delish.. the only addition I would make to this is a quick squeeze of fresh lemon juice to give it that cream cheese "tart"ness. Thanks for these inspirational recipes. I was wondering though, where you get your raw cashews from? and do you soak and rinse yours before using them??

I don't really soak - I know I should but I am busy and lazy.

When it comes to my recipes, if I say "soak" it means you HAVE TO SOAK to get the recipe to work properly. However, that is not so with this recipe :) In other words, NO, you don't have to soak if you have a high-speed blender.

(If you have a crappy blender you should soak in warm water just to soften them so they will blend better.)

I just read recently that cashews are one of the few nuts that you do not need to soak because they do not contain the enzyme inhibitors that some nuts have. :)

Hi Katrina..my local Health Food store sells raw cashews as well as Trader Joe's. I always soak my cashews for a few hours before I include them in recipes 1) because it breaks
down the enzyme inhibitors..and 2) they whip up much creamier once they are soaked and rinsed..hope this helps.
