2 cups unsoaked cashews

1/2 cup pine nuts (or just use more cashews if you don't have pine nuts)

1 tablespoon lemon juice

3 cloves garlic

1 1/2 cups water

1 teaspoon thyme spice

1 teaspoon sea salt

Directions

1. Throw it all in the blender and blend 'til it gets alfredoey! It'll get really nice and creamy, so keep blending... And you're done!

2. Serve over "noodles!"

Raw Noodles

Of course, you know that raw "noodles" are simply spiralized zucchini or squash. (Or kelp noodles that you buy at a store.)

If you don't have a fancy spiralizer nor any kelp noodles on hand, just do what I do: peel the vegetable and discard the peelings. Once all of the tough peel has been removed, just use your vegetable peeler to make "noodles" out of the remainder of the vegetable. I usually discard the really seedy core though. Zucchini makes the best noodles.

I'd recommend zucchini. They have the best texture and their taste is quite bland and it takes on the sauce's flavour very nicely. But for the love of God don't use cucumber for the noodles! (Cucumbers are too wet; avoid cucumber noodles.)

I miss cheese, I really do. But I tell ya, this raw alfredo sauce recipe has a cheesy, creamy texture that is oh, so alfredoey.

I can honestly say that I like this alfredo sauce more than SAD (standard American diet) alfredo sauce. HONEST!

If you've tried my raw mayonnaise recipe the taste is quite similar, although this alfredo sauce is quite garlicky, whereas the raw mayo does not contain any garlic. Enjoy this absolutely delicious alfredo sauce recipe.

This recipe is quite large, and it actually keeps in the fridge really nicely.

This recipe works best with zucchini "noodles" (see below for more info) or with raw vegan kelp noodles, as seen in this photo.

Toppings

Sometimes I top my alfredo sauce and noodles with vegetables. Your taste-buds will let you know what topping you might like to try on your pasta.

My husband prefers broccoli and red pepper. I love parsley, mushrooms, tomatoes, and olives. To each his or her own! Edit: Actually, I love black pepper and parsley and that's it! Simpler is better!

But for your first time just try it simple: raw alfredo noodles and sauce.

I have never tried kelp noodles, Tommie! I am dying to try them though. I can imagine that this dish would be delicious served on top of a bed of kelp noodles. The next time I'm at my health food store, I'll enquire about kelp noodles.

where do you find kelp noodles? I looked at my local health food grocery store (which is pretty large & well stocked) and they didn't have them. Does anyone have a good mail-order source? Maybe I could ask the store to do a special order.....

I ordered mine online directly thru the brand, Sea Tangle Noodle Company, www.kelpnoodles.com. I haven't tried them yet, because I just got them last night, but I plan on making this alfredo for dinner tonight to serve over them!

I order quite a bit of Raw food staples from IHerb.com...great prices and service...I just ordered the kelp noodles and other specialty items. Hope this helps.

Consuming veg is good for wellness. For people who tend to be concern regarding your own health, you should cease consume meats and go for vegetable right away. Many vegetable recipe now isn't really wellness but are delicous as well. So just attempt for one month even you are afraid of not capable to sustain on it.

I just discovered your site and love it! But I have one question - what kind of blender are you using that is able to pulverize 2 1/2 cups of nuts? My blender doesn't stand a chance of doing that. Please enlighten me... Thank you!

I use a Vitamix. In my opinion, it's the best blender there is.

I added a little savoury yeast flakes to the mix which gave it a real smokey taste. Outstanding! :)

I was just looking at this recipe again and that seems like a lot of thyme... Is it too much?

This looks amazing! I love your site-- discovered it last week and made the rice pudding (which was to die for). I'm excited to try this one too-- I am on a bit of an alfredo kick, but not loving the recipe I currently have. Just wanted to throw my two cents in about cucumber noodles-- don't give up on them!! They can be really amazing! Take some cucumber noodles, throw in a bit of sesame oil and some nama shoyu, mix and top with some chopped almonds. Serve with avocado for an AMAZING meal! It's in Sarma's cookbook.

What can be used as a pine nut substitute?

You can definitely simple replace the pine nuts with more cashews!

what happens if you used soaked cashews? i'm SUPER new to raw food, but i'm enjoying the discovery! my husband is pretty hungry most of the time, though. poor guy. he loves alfredo so i'll make this with regular noodles for him and the kids.

THIS WAS AWESOME!!!!!!!!!!!!!!!!
I subbed soaked sunflowers for the pine nuts (pine nuts give me "pine mouth" which is awful because the only thing that tastes right when I have it is orange juice and Altoids) and the Tablespoon of Thyme was just right. Because I used roasted cashews the first time, i didn't add the salt, but it could have used it. We also added pepper.
The Hubs loved it on regular noodles, but he took seconds of the zuke noodles, so that means he liked the zuke noodles and sauce better than regular noodles.
I'm making it again tonight. Still with regular noodles for the kids. My children are 2 and 3 and VERY VERY skinny. I don't feel good about cutting more calories from their diet. The kids are also getting some non-GMO free range chicken.

I just made this and it tastes good... except... I think you ment 1 teaspoon of thyme instead of 1 Tablespoon. It's too strong of a flavor, but not bad. Would be good if less thyme :P

This was delicious. Thank you. I went raw a little over 1 month ago so im in exploratory mode. Stumbled upon your site today and i am very pleased. Chocolatefudge cookies are in the dehydrator now...took your advice and "dipped" into them. So so yummy. Can't wait to try the brownies. Im a big chocolate lover. For the pasta, I used walnuts in place of cashews because walnuts are in the alkaline end of the scale, cashews more acidic. The substitution worked out great. I also added avocado tothe sauce...made it even more rich and creamy. Also added 3 tsp. Nutritional yeast to get a cheesy effect. I topped it with mushrooms parsley and grape tomatoes marinated in thyme sea salt and olive oil, dehydrated for 30 mins. Delicious. Anyway, thank you again. Fettucine alfredo used to be my favorite dish so this was reAlly great for me! Served it with a side of raw "creamed" spinich...my own recipe :) spinich, baby arugula, sea salt black pepper garlic and olive oil, massage until spinich looks cooked. Add half a mashed/processed avocado and mix well. Soooooo gooooooood. Looking forward to ordering the kelp noodles eeeee. Peace Love and blessings :)

For the first time in weeks - maybe a month or more? - I don't want to keel over and die after eating a meal!!

I'm currently pregnant with our second child, and I've never been so sick in my life! I've had to cut wheat, dairy, corn, eggs, beef, peanuts....the list goes on. Now when I look at that list, I realise it's all cooked foods. :S Anyway, I was told to go back to eating more raw foods (dabbled with it in the past), but today I was craving rice pasta with butter and parmesan. This TOTALLY kicked that craving's butt! I did change the recipe a bit, to add a tiny hit of prepared Dijon, paprika, and a pinch of nutmeg. I didn't have any nutritional yeast on hand, so I added some Bragg's and a bit of Worchestershire to try and get a similar taste. It's sweeter than regular alfredo without the yeast, but it's totally satisfying.

I cannot thank you enough for posting this!!!

I'm introducing my dairy-addicted housemate to the joys of a high raw diet at the moment and I've just prepared the sauce to go with carrot and courgette noodles. However, she's a mushroom addict, so I also threw in a splash of truffle oil and three big mushrooms (two blended in, one coarsely chopped). I don't think she's going to miss the dairy taste at all, but even if she does, this recipe's a keeper! I don't tolerate milk well anyway, so it has been quite literally years since I had anything that tasted even remotely like this. Brilliant!

And if she's a mushroom addict you've gotta feed her raw cream of mushroom soup! I'll post a recipe for that soon. I've been eating it lately. It's super duper easy.

I had three clean plates tonight - Housemate's BF ended up licking my plate clean when I passed it to him to go in the dishwasher! I think we can safely say it was appreciated. I'm sure the mushroom soup will go down just as well, so I'll keep an eye out for that :)

I can't wait to see this cream of mushroom soup recipe. In fact...I want it NOW! Lol!

Yummy yummy yummy! My husband is transitioning into a raw food diet and he almost cried when he was at a party where baked ziti was being served. I found this recipe I was deeply hoping he'd enjoy it as a good replacement for his pasta. He LOVED IT! I tossed this in a bowl with kelp noodles, cherry tomatoes cut in half, some diced basil a sprinkle of salt and pepper - plated, added more sauce on top, a splash of freshly squeezed lemon, another sprinkle of basil and a tiny pinch of salt. Sooo goood!

Pleasantly surprised with this recipe, it's tummy!! I used a tablespoon of thyme leaves (vs ground thyme) and it's perfect. Sprinkle a little bit of coarse ground sea salt on when serving and you will get a taste explosion.
