Ingredients
- 2 1/2 cups cashews
- 1 tablespoon lemon juice
- 2 cloves garlic
- 1 1/2 cups water
- 1/2 teaspoon thyme spice
- 1 teaspoon sea salt
Recipe Directions
- 1. Throw all ingredients in the blender and blend 'til they get alfredoey! It'll get really nice and creamy, so keep blending... And you're done!
- 2. Serve over raw vegan "noodles!"
- Raw Noodles
- Of course, you know that raw "noodles" are simply spiralized zucchini or squash. (Or kelp noodles that you buy at a store.)
- If you don't have a fancy spiralizer nor any kelp noodles on hand, just do what I do: peel the vegetable and discard the peelings. Once all of the tough peel has been removed, just use your vegetable peeler to make "noodles" out of the remainder of the vegetable. I usually discard the really seedy core though. Zucchini makes the best noodles.
- I'd recommend zucchini. They have the best texture and their taste is quite bland and it takes on the sauce's flavour very nicely. But please don't use cucumber for the noodles! (Cucumbers are too wet; avoid cucumber noodles.)

I miss cheese, I really do. But I tell ya, this raw alfredo sauce recipe has a cheesy, creamy texture that is oh, so alfredoey.
I can honestly say that I like this alfredo sauce more than SAD (standard American diet) alfredo sauce. HONEST!
If you've tried my raw mayonnaise recipe the taste is quite similar, although this alfredo sauce is quite garlicky, whereas the raw mayo does not contain any garlic. Enjoy this absolutely delicious alfredo sauce recipe.
This recipe is quite large, and it actually keeps in the fridge really nicely.
This recipe works best with zucchini "noodles" (see below for more info) or with raw vegan kelp noodles.
Toppings
Sometimes I top my alfredo sauce and noodles with vegetables. Your taste-buds will let you know what topping you might like to try on your pasta.
My husband prefers broccoli and red pepper. I love parsley, mushrooms, tomatoes, and olives. To each his or her own! Edit: Actually, I love black pepper and parsley and that's it! Simpler is better!
But for your first time just try it simple: raw alfredo noodles and sauce.

Do you heat it or just eat it cold?? I'm pretty sure raw food is supposed to be unheatened so that's probably considered as a stupid question. But eouldn't it feel weird to eat it cold? Do you cook the zucchini for a couple of minutes? And here I thought zucchini and squash were the same vegetable :sSs haha

Great questions! When it comes out of the blender, is it warmish -- not too cold. Also, no need to cook the zucc. It's not too weird cold, I promise. Think of it more like pasta salad if that helps your mind get around it :)

Raw alfredo sauce recipe
I made this tonight, it was GOOD! I couldn't use the garlic because I'm allergic to it & I didn't have any thyme spice. Even with these omissions, it was fantastic, rich & creamy just like true Alfredo sauce. I'm the only one eating it but I made the full recipe so that I can thin it out with a little bit of water & use it as a salad dressing.

This was really great! Thank you so much for this recipe! I am working on becoming completely raw and this recipe will definitely become a staple. It was different...but in a good way! I am used to eating pasta while it's hot, of course, but eating the raw zucchini noodles with this sauce really satisfied my pasta craving.

YUMMMMMY!!!! My FP arrived today and I could hardly concentrate at the library with thoughts of cookie dough and alfredo sauce dancing in my head!!! Very good. its a quick and tasty dish. I topped Iit wit nutritional yeast. It was so good even my veggie distaining husband liked it. He had me fix him a potion to accompany his steak. Yes he's still carnivorous. But I keep working on him.

Just made the Alfredo sauce with leftover zucchini noodles from pasta primavera yesterday - it is by far the creamiest, richest, most indulgent and delicious raw recipe I've made yet!! Well done Rawtarian!

Made the Tomato soup yesterday and this today. I'm on a very limited diet and this is out of site! My little Eskimo's (you know frozen meat eaters) are asking if they can have more of my dinner. Everything I have made raw so far they have devoured! I feel like I have entered a secret food society!!
