Recipe Directions

  • 1. Blend cashews and the water until nice and smooth.
  • 2. Add everything else (except the chia seeds). Blend again.
  • 3. Place the chia seeds in a bowl. Add the blended mixture. Stir thoroughly to ensure the chia seeds are well distributed.
  • Cover and refrigerate overnight (or for at least 3 hours).
  • Eat in the morning or for dessert in the evening! Stir well again before eating.
  • This is a delicious raw chia tapioca pudding recipe. The chia seeds become gelatinous and really remind me of good old-fashioned tapioca. Mmm!

One of my favourite foods right now are chia seeds.

What is their claim to fame (besides being known for sprouting those famous "chia pets")?

Hey, I made this and the rice and find that this one has a cup more water and is runny, is 3 cups a typo?

So I ran out of cashews and tried hazelnuts and they did firm up into a very thick pudding, but definitely not as creamy and yummy as cashews. I’m eating it anyway and since it’s drier, I added some coconut oil and it’s not bad!

As mentioned - no, it really only works well with cashews, because they are the creamiest nuts. (Almonds will be not creamy enough, and too gritty/pulpy)

Unbelievable yum! I had chia pudding at soho juice and loved it- they served it with banana, almond butter and almonds. I tried mine the same except I blended pitted dates to the liquid for the sweetness instead of agave- I figure I get more natural fiber that way- and it tastes great! Tried to blend with banana but I didn’t love the result. Sticking to vanilla, cinnamon and cardamom.

Perhaps this should be called a tapioca-like pudding, since calling it tapioca is misleading. Sounds delicious though.

I've tried making a chia pudding before but I noticed that the bulk chia seeds have what look like tiny twigs in them. Is that normal? I've gotten them prepackaged before and they didn't have them. I'd prefer bulk but I'd like it to just be the seeds. Any ideas?

I've seen that before too, Brett. It's probably just a lower-grade chia seed that hasn't been sifted quite as vigorously. I wouldn't worry about it too much, but pick them out if you can. Or maybe complain to your bulk retailer and ask for a better grade chia seed. Although the price may go up :)

Hi, I haven't made this yet, but I noticed that the amounts of water stated in the ingredients list and the directions are different. I understand you recently changed the water measurement in the ingredients, but I guess you forgot to change it in the directions.

Hi Stephanie, Great comment and astute thinking! I have now reduced the water down to 2 and a half cups, which might make it more puddingy. I agree that as time passes I have enjoyed thicker puddings.
