1 1/2 cups cashews
3/4 cup water
1 tablespoon fresh lemon juice
3/4 teaspoon turmeric
1 1/2 cloves garlic
3/4 teaspoon celtic sea salt
3 celery stalks - finely chopped (reserve!)
3/4 of a fresh red bell pepper - finely chopped (reserve!)
sprinkle pepper (reserve!)
sprinkle paprika (reserve!)
Directions
1. Add everything (except celery, red pepper, pepper, and paprika) into a high-speed blender. Blend very well until it resembles a smooth, creamy hollondaise sauce! (Note: if you don't own a super powerful blender try soaking the cashews for a few hours first to help soften them.)
2. Pour yellow "egg salad" liquid mixture into a large bowl. Add chopped celery, chopped red pepper and anything else you'd like to add, like chopped parsley or chopped white onion, too.
3. Mix everything together with a spoon until nicely coated, like in pictures. Sprinkle with pepper and paprika. Your raw egg salad recipe is now ready to eat!
4. Serve on romaine lettuce wraps for an raw egg salad sandwich experience. How do you like to enjoy this raw egg salad recipe?

Raw egg salad recipes - It's surprising that raw egg salad recipes have eluded me for almost two years. Believe it or not, I've never made a raw egg salad recipe before!
To my pleasant surprise, this raw egg salad recipe is, um, totally ridiculously incredible. It actually reminds me of egg salad! I have made a few sort of similar recipes in the past, but nothing that screamed "This tastes like egg salad!!" quite like this raw egg salad recipe.
This is quite a fatty, heavy-tasting recipe, so you'll want to ensure that you're serving it with lots of nice fresh veggies, especially romaine lettuce. Yum!

Lots!!! But the good news is that it is so rich that you can't eat too much because it is so dense it makes you really want to eat a lot of crisp greens (romaine lettuce) with this.

I love your "egg" salad. Its really good. I'm mostly vegan though sometimes I'm vegetarian. I really like eggs. So this week I decided to be raw vegan and try to include food that I like into my menu. Well this hit the spot. I took it to work for lunch and my coworker tried it and couldn't believe that it didn't have eggs in it. Your a genius.

Oh wow! With all these good comments I'm ready to give this recipe a try for my Raw Potluck on Saturday! :) I wanted to know tho, how many portions does this recipe gives? And does it have to be eaten rightaway or we can keep it in a sealed container in the fridge for a day or two? Thanks dear, and amazing blog btw! :)

Hi Audrey Rose, it is best fresh but yes it does keep pretty well for a day or two - just store the "creamy" part on its own, and then add the "mixins" (celery etc) just a few minutes before eating. It makes quite a few small servings (4 or 5 maybe?) because it is very rich and you can only handle so much in one sitting

I added salad cut hearts of palm to this recipe... Not raw, but a good soft texture like egg whites :-)

I have just eaten this for my lunch and it was delicious! Very rich, but as you said, you only need a little. I added some chopped avocado at the end, as mentioned in a previous post, and it worked really well. I reckon it would be lovely on potatoes for a summer potato salad too!

I forgot to say that I only eat raw sometimes, as I have just started incorporating raw into my diet, so obviously potato salad wouldn't be raw, but great for vegans! :)

Just have started the raw diet, in week two. So far i love it, especially for energy reasons. Quickly came across this looking for something to compliment the cashew apple salad. And this was AWESOME. so tasty, had to add some curry to replace the turmeric, but seemed to work just fine.
I'm not doing vegan - raw, only because i am looking forward to trying some of my own ceviche at home. But defiantly your website is making raw really fun, and also simple.

Hello,
I have been browsing your site because it popped up on google when I searched "quick and simple raw recipes." I saw your "egg" salad, and it immediately struck my fancy! Before I went vegan, I LOVED egg salad, so I'm very excited to try this =). My husband has cut meat and animal byproducts significantly -- mostly to help support my changeover -- but is not completely vegan yet, so I'm adding some boiled eggs to his. I'm also going to replace some of my cashews with sunflower seeds because I love their flavor! I can't wait!

Can you give me some idea where Celtic sea salt can be bought? I have not seen this b4, if I can't find it, can I sub by using rock salt or table salt?

Hi Emmeline, I usually buy celtic sea salt at my health food store. In a pinch, you can use regular sea salt instead. Stay away from table salt.
