Ingredients
- 1 1/2 cups cashews
- 3/4 cup water
- 1 tablespoon lemon juice
- 3/4 teaspoon turmeric
- 1 1/2 cloves garlic
- 3/4 teaspoon sea salt
- 3 celery stalks - finely chopped (reserve!)
- 3/4 cup red bell pepper - finely chopped (reserve!)
Recipe Directions
- 1. Place everything (except celery and red pepper) into a high-speed blender. Blend very well until it resembles a smooth, creamy Hollondaise sauce.
- 2. Pour yellow “egg salad” liquid mixture into a large bowl. Add finely chopped celery and red pepper.
- 3. Stir everything together with a spoon until celery and red pepper are nicely coated.
- 4. Enjoy immediately or store for up to 4 days in the fridge.

This cashew-based mock egg salad recipe tastes surprisingly like the real thing. It’s very rich and satisfying, and tastes best when balanced with light, fresh veggies, especially romaine lettuce.
If your blender isn’t powerful and has a difficult time blending harder items, consider soaking the cashews in warm water for an hour to soften them. Rinse and pat dry before using.
Another idea is to add some chopped mushroom to the red bell pepper and celery. The chewy texture of the mushrooms resembles the texture of egg whites.

Raw egg salad recipe
This raw egg salad recipe has become a staple for us as we have transitioned to the raw food diet. It honestly tastes better than any traditional egg salad recipe. We LOVE this. Thanks so much Rawtarian. We love you! :):):):) That's my hubby there in the picture, giving you a thumbs UP! :):):)

Yum!!!! This completely did my head in (Heston Blumenthal style)! No eggs & yet....! Lol. I took note of prev posters' comments & added some sliced mushrooms for perfect egg white texture. I don't think we have 'egg salad' as such in Australia but it seems this translates to our 'curried egg'. With that in mind, I left out the red capsicum but dared leave the celery which made for delish crunch & lightness. Well done, well done! ....I think I'll use the basics of this recipe as a substitute for too-overpowe

Raw egg salad recipe
I loved it. I added a pinch of Black Himalayan salt to give it a bit more of the eggy sulfery flavor.
The stuff really tastes like egg salad. I just went vegan a few months ago and I love eggs.
In a Vitamx it's so quick and easy.

Oh and the mushrooms are GENIUS!! They give the texture of egg salad for sure. Baby Portabella awesome! I also added parsley and green onions (left out the celery I hate the stuff).

Wow! I didn't believe this was going to be like egg salad. Wow!! I wanted an egg salad sandwich all day. This was totally awesome and made me forget all about real eggs!

Raw egg salad recipe
I LOVED this! I made it tonight, literally in minutes! My wife kept asking; Where are the eggs? She liked the yellow sauce but wanted more to chew on. She wanted me to add egg whites for the "egg" salad. I decided to double the veggies and take 1/4 cup of cashews and soak them, giving them a softer, hard boiled egg like texture. This will hopefully please everyone. For now, I love it and it tastes great!
Thanks for the website info! I will go check it out. I Googled cashews and see that it gives data for 100 grams. A cup and a half of cashews weighs close to 180 grams. So I can start there. Thanks again!

Raw egg salad recipe
Hi, my husband and I tried a few of your recipes and all have been great. I wanted to comment on this one because I used some different ingredients and I thought I'd mention it in case anyone else wanted to try them out.
We didn't have bell pepper in the house so I used more celery and just a couple of mushrooms. I pulsed the celery and mushrooms in the food processor which worked really well. I also added a bit of finely chopped red onion and some dill weed. It was really tasty and I'll be making it again next week. Thank you for all your great ideas!

Raw egg salad recipe
I made this a week ago and just LOVED it!! I had a bunch of odds and ends in the fridge so used them as my add-ins and to my surprise, the mushrooms we my favourite - they added that *egg* texture so that my brain said YES!!! This is EGG salad!!! .. I had all other egg salad favs in there too ... I also served this to my son & DIL and they loved it too! :)

What other nut could I substitute? Maybe pine nuts? ( no cashews for me)

Hi Pam,
For this recipe, instead of cashews you could use pine nuts or macadamia nuts or a combination thereof.
No other nuts will work though.
