Recipe Directions

1. For the sunflower seed dressing, soak 1 cup of raw sunflower seeds for 4-6 hours.
2. Drain the water and then place the sunflower seeds in a blender along with 1 tbs of fresh, finely chopped dill, 1 tbs of raw apple cider vinegar, 2 tbs of lemon juice, 1 date and then blend on slow speed.
3. Add finely chopped broccoli, red onion, and ½ cup of raisins with the remaining ¼ cup of sunflower seeds in a bowl. Mix it well with the sunflower seeds dressing. This recipe should last one week in the fridge.

This is a raw version of our Ukranian traditional broccoli dish. It is said to pack the most nutritional punch of any vegetable. It boosts immune health because of it high amount of beta-carotene, zinc, and selenium. It promotes healthy bones since it contains more calcium and Vitamin K than most dairy products. It even contains 11.1 grams of protein per 100 calories. In additional, a cup of broccoli has as much protein as a cup of rice or corn with only half the calories.

I am doing the January 2019 Low Fat Raw Cleanse which I ABSOLUTELY LOVE. I cannot wait to try this recipe when I'm done because it looks DELISH!!! Then I'll come back and rate it.
