1 tablespoon cold-pressed olive oil
½ tablespoon raw agave syrup
1 teaspoon paprika
¼ teaspoon cumin
¼ teaspoon cayenne
½ tablespoon Lime juice
½ teaspoon salt
¼ onion (sliced)
1 clove of garlic (finely crushed)
1 carrot (grated or julienned)
½ summer squash (thinly sliced)
½ red pepper (sliced)
8 button mushrooms (quartered)
1. Mix all the marinade ingredients together. Toss the vegetables into it and make sure they’re well coated.
2. Cover and leave to sit for at least 4 hours. During this time the veg, especially the mushrooms, will change their texture and become softer.
3. If you like, you can then put them in a dehydrator for an hour or so to warm through or into an oven on its coolest setting for 10 minutes.

Really fresh tasting fajitas that my partner now prefers to the greasy cooked variety.
You can increase the cayenne and garlic content if you like things spicier!
You can easily vary the vegetables you use.
Great with guacamole and salsa in a wrap! Serve with jicama coconut rice.
