5 apple rings (dehydrate your own or buy at market)
3 Medjool dates (pitted)
1 tablespoon liquid sweetener of your choice
1 teaspoon vanilla extract
½ teaspoon almond extract
Water (as needed)
1. Place everything in a food processor except lemon.
2. Squeeze in the juice of the lemon. Remove lemon flesh and add that.
3. Place everything in a food processor and whir (I used my fave, the Magic Bullet).

I made this one night when my mom had made a tarte tatin for the family.
Determined not to forgo dessert, i made my own tarte tatin concoction.
It was spectacularly similar although they had creme brulee ice cream on top.
You might be surprised how much water you’ll need. It makes the mousse very light and renders quite a bit of it!
I hope you enjoy.
Variations: substitute dried cherries for cherry pie mousse, dried peaches, etc.
For best results and assured integrity, drying fruits in your dehydrator is the way to go. Apple rings only take about 7 hours.
