This is a superfast snack when you have a craving for sushi. I’m terrible at rolling sushi and I haven’t found a raw rice replacement that I like so this is my lazy solution. You could double or triple it to make a meal to share.

1 avocado, cubed
1 sheet raw nori, torn into small pieces
1 tablespoon Nama Shoyu
1 tablespoon sesame seeds
Recipe Directions
Combine all ingredients in a bowl, toss and serve!

This sounds great! How much cauliflower do you use?

This may sound distasteful but it is quite WONDERFUL!
Just throw cauliflower in your cuisinart and run until it grainy & resembles rice.
(I got the idea from Alissa Cohen's book)
I also like to throw in a good amount of ginger to taste in with it and it incorporates a nice flavor to the cauliflower.
I layer a thin amount of cauliflower mixture to cover all but about two inches from the top of the nori sheet,then layer seeded cucumber strips, avocado, red bell pepper, sunflower sprouts, shredded spinach, shredded carrot...whatever you fancy really!
A few sesame seeds and roll it up and slice the into pieces with a wet blade.
(I found untoasted nori sheets on oneluckyduck.com)
It's wonderful and I seriously do NOT miss the rice at all!
I hope you try this and like it, it has truly helped in my raw journey when I am having "cravings".
