depends on your eggplant
Ingredients
1 egg plant, skinned and chopped
1 lemon, cut for squeezin
1 big garlic clove or several smaller ones to taste, peeled
1 teaspoon sea salt
4 tablespoon fresh parsley
olive oil, to taste and to consistency
Recipe Directions
peel and chop eggplant and put in a bowl with a little olive oil and lemon juice and salt mix well stick in the fridge for a bit( hour or more) then wash and coursly chop your parlsey put that and garlic in the food processor or blender and mix add egg plant and belnd until smooth! enjoy as a salad or dip or spread wonderful with hummus and falafel!

By omshantiStill working on my fav. persian recipes to turn them raw and vegan, but this one turned out better than expected! usually the eggplant is roasted until the insides are gooey, but i found soaking the eggplant in a mixture of salt, lemon juice and olive oil and massageing gently for a minute or two actually softens it enough to blend to a very similar consistency!
It is a pretty shade of green, unlike the cooked version….

hey guys made a second batch, with a half of a "contraband" (cooked) chipolte pepper, and less arsley hoping ot get a smoky flavor and a better color. it was SPICEY so flavor not as authentic but texture and color way closer to nonraw.

I absolutely LOVE baba ganoush, and have been wondering how to go about raw-ing it... definitely going to try this!

Raw eggplant scares me a little but if you say it's good, I'll try it! =) I looked up eggplant and this is what I found. It's not poisonous- but the leaves can be if ingested.
Ethnobotanic: It has been used as an antidote to poisonous mushrooms (Duke & Ayensu 1985). It is bruised with vinegar and has been used as a poultice for cracked nipples, abscesses and hemorrhoids.
The leaves are narcotic and toxic. A decoction is applied to discharging sores and internal hemorrhages. A soothing and emollient poultice for the treatment of burns, abscesses, cold sores and similar conditions can be made from the leaves.
The ashes of the peduncle are used in the treatment of intestinal hemorrhages, piles and toothache. A decoction of the root is an astringent.
The fruit helps to lower blood cholesterol levels and is suitable as part of a diet to help regulate high blood pressure (Chiej 1984).

This is the FIRST raw dish other than smoothies that i have ever made. What a great first! IT was simple and had minimal ingredients. I only have a hand held food processor/blender and it did the trick. I tossed the parsley and garlic (and one habenero pepper) with the eggplant before blending it. I made a lot and I think this helped me end up with consistent batch all the way through. THANK YOU! Great recipe.

kurdsishmom, your story is too cool, are you gonna write a book? hope your huby likes this version of baba ganoush, im working on my other fav. persian creations. peace to you.

Wow cool.. A raw recipe that I can talk my hubby into.. Since he's half Irani I'm sure he'll like it and it's incredibly easy to make.. (I'm very limited on things like electricity and only have a blender+juicer right now) We'll have to try it

eeeeewwww(on hemoroids really?) and coool! my favorite vegitable has quite the uses huh? raw eggplant can be bitter,if it seems that way to you let it sit in a bit of salt for a while then rinse then use( my exmother inlaw who is a persian housewife taught me that little trick bet she didnt know about the hemmmoroids! ;)
