2 cups or so, depends on the size of the cherries -

Ingredients
½ cup coconut cream
½ cup cacao powder
2 tablespoons yacon, agave, or honey (combine well then add)
¼ cup black walnut pieces
½ cup cherries (pitted, frozen)
Recipe Directions
1. Place 1/2 cup coconut cream in quart container.
2. Add cacao powder and yacon. Stir to combine.
3. Add black walnuts and pitted cherries.
4. Chill for pudding or freeze for ice cream.

By waterbaby12347Needed something decadent after putting up all these summer fruits and veggies so I decided to mix up a luscious delight! Hope you too enjoy it.
I already had a quart of coconut cream in the refrigerator, so I used it as my base.
I made the cream by blending the water and meat of 2 young Thai coconuts until creamy.
I may also grind up a couple of tablespoons of cacao nibs and stir it into this mixture.
This is so easy and scrumptious!

Hi waterbaby there you are! This sounds really good and when my blender gets here next week I am going to try this out. That is a lot of cocoa powder for me though I might start swinging from the moon after I eat that. It gives me flashbacks to the seventies when I eat cocoa. I don't have any frozen cherries this year so maybe I will use a different berry. This would be great to feed a guest with.

Rosemary, you don't need the blender just a fork or spoon... But you are right, you will be about moon high!!! LOL I did add the nibs and oh my, what a delight!!!
