Yield2 cups or so, depends on the size of the cherries
½ cup coconut cream
½ cup cacao powder
2 tablespoons yacon, agave, or honey (combine well then add)
¼ cup black walnut pieces
½ cup cherries (pitted, frozen)
1. Place 1/2 cup coconut cream in quart container.
2. Add cacao powder and yacon. Stir to combine.
3. Add black walnuts and pitted cherries.
4. Chill for pudding or freeze for ice cream.

Needed something decadent after putting up all these summer fruits and veggies so I decided to mix up a luscious delight! Hope you too enjoy it.
I already had a quart of coconut cream in the refrigerator, so I used it as my base.
I made the cream by blending the water and meat of 2 young Thai coconuts until creamy.
I may also grind up a couple of tablespoons of cacao nibs and stir it into this mixture.
This is so easy and scrumptious!
