Serves 4 -8 fun people
Ingredients
1 cup raisins
½ cup almonds
4 tablespoons sweetener
1 cup nuts (soaked)
1 tablespoon cinnamon
1 sprinkle vanilla bean
1 carrot (spiralized, half for garnish)
1 sprinkle ginger
½ cup water
Recipe Directions
1. Put raisins and almonds in food processor and blend roughly with half of sweetener and a little cinnamon.
2. Press mixture into loaf pan.
3. Take 1 cup of soaked nuts and blend in blender with vanilla bean, a little cinnamon, ginger, half a shredded carrot, and a little sweetener. Add approximately 1\2 cup water to thicken consistency. I used Brazil nuts but any kind are okay.
4. Layer in loaf pan.
5. Add carrot on top as garnish.
6. Freeze for 1 hour.

You may want to line the loaf pan so the cake can be removed easily.
My crust was pretty crumbly so it didn’t stay together very well. This could be helped by pressing more firmly into the pan.

This was the best cake ever, everyone loved it at my son's birthday party!! I am impressed. It's so awesome!!!

I just made this, I used cashews for the icing and i added juice of 1 lemon + 1/2 tsp sea salt to make it more like a cream cheese icing and it turned out GREAT!!! I also added a little nutmeg to both the crust and icing. Thanks so much for the recipe, this is definitely worth preparing!!!

Aaah incredible! This tastes amazing. I agree with Icsalas, have some fun and throw the lemon juice in. It tasted nice and not too bright, but just enough.

I just made this and threw all kinds of stuff in together....I just do things like that so we'll see how it comes out. I used in addition to raisins (which I didn't blend) some dates, used some raw almond meal, some flax meal, flax oil, some dried coconut, the "trash" from juiced carrots and chopped walnuts...oh yeah, I added some hemp seeds as well.....going now to make the topping...just tasting it so far is divine....thanks for sharing this!

I was craving carrot cake and made this. The "cake" part tasted exactly like carrot cake but the "icing" seemed a bit bland to me. I used cashews though. And I used dates in place of raisins and the crust was still good! It curbed my craving either way!

Thanks, I added this to my recipe box to make later. I think it would also be good with a little pineapple. It looks beautiful and sounds great!
