Recipe Directions

Slice cucumbers and pepper. Serve on a spinach leaves. Green mousse preparation: Blend buckwheat, some spinach (or kale), garlic, salt, lemon juice, and olive oil. Shred herbs and add to mousse. Mix and serve on prepared spinach leaves and slices of pepper. Enjoy this green delight.

layladebloody, yes, you can easily replace the buckweat with any seeds or nuts you like. Sprouted Sunflower seeds or pumpkin seeds will work great here! Or you can try avocado guacamole type souse.

I can't eat grains but this sounds really good...do you know a good replacement for the buckwheat?

i also tend to stay away from grains, just a preference, but buckwheat is technically a fruit :)
