Ingredients
1 large zucchini (shredded)
1 cup macadamias or pecans (ground)
5 dried figs (rehydrated, pureed)
5 pieces crystallized ginger (pulsed to pieces)
½ to 1 teaspoon cinnamon
¼ teaspoon allspice
¼ teaspoon nutmeg
1 teaspoon vanilla
¼ teaspoon ground cloves
4 tablespoons flax meal
Recipe Directions
1. Just mix all together as noted and press onto Teflex sheets.
2. Dehydrate for about 10-12 hours to desired crispness at 105 Fahrenheit.

By hkittykittyAfter making the lovely carrot crackers, I wanted to try and use zucchini in the same fashion but make it sweet like bread so I threw this together.
So far it smells lovely. Can’t wait to try it!
I bet it would be even better if you added a little orange zest and a pinch of salt.

yeah, I thought about that as well. I don't think its heated though, just dehydrated after soaking in sugar right?

Zucchini comes in so many sizes, what is the approximate ratio of nuts to zucchini?

We ended up using about 2-3 cups of shredded zucchini. This turned out well. I would cut back on the spices a bit next time. The spices tasted great when it was still wet, but after the bread was dehydrated the spices were too strong. I used about a large thumb size of fresh ginger instead of crystalized ginger.
another note.. we used my mother in law's cheapy dehydrator

Could I use fresh figs? I have several HUGE fig trees that are loaded! This looks good and I LOVE ginger. There is a place near me in Cali that has fresh organic ginger...but I don't think it is raw either...but I am not 100% raw as I use spices and nama shayou on occasion. I want this now! I will make tomororw!!

I'll try this, probably with walnuts. I'd say crystallized ginger isn't raw because it usually has processed sugar on it. I'll probably use fresh ginger, more to avoid the sugar than to have it all raw.
That said, this looks like an awesome recipe!

you're welcome Alix! I did look up recipes for crystalized ginger and most of them called for steaming or boiling it until tender. :(

Crystalized ginger is raw. Or it usually is.

Sounds good. Of course I don't know if crystalized ginger is raw, but I'm sure you could use fresh ginger with some added sweetener to replace it. Just a suggestion :).
