2 cups almonds unsoaked
15 Medjool dates
½ teaspoon sea salt
1 teaspoon vanilla
¼ cup orange, lemon, or lime juice (optional)
Zest of orange, lemon, or lime (optional)
1. Place the almonds in your food processor and process until the almonds resemble graham cracker crumbs. This took me about 3 minutes.
2. Add the dates, salt, vanilla, and optional zest and process until the mixture comes together (about 2 minutes or less).
3. Press into the bottom and up the sides of a springform pan.
This is not actually a graham cracker crust. Because, as you may know, graham crackers are not raw.
But it is a very close imitation when used for cool things like cheesecake and fake samoas. Oh yeah!
