This soup sort of reminded me of a curried butternut or squash soup. It was quick and easy to prepare.

Recipe Directions

Open a young thai coconut and reserve coconut water you will need 1/2-1cup of coconut water. Scoop out coconut meat and place into a vita mix with red pepper, 1/2cup of coconut water, curry powder, garlic, red pepper flakes, and garam masala. Thanks for this recipe. I've been looking for simple soup recipes. I like that it uses one coconut.

This soup was VERY quick and easy to make! And it tastes great! Either by itself or as a base with other veggies in it!! Very Good! although I may have added too much red pepper!! =)

i made it for a second time today... it is excellent and so simple! i use all the water and like to strain it, since pepper has a tendency to have more coarse skill; in addition garnish with chopped dill. it is hard to imagine flavor of this one, until you try it.
