2 generous servings
Ingredients
1 young coconut (just the flesh)
1 passion fruit (just the pulp)
1 mango (peeled, diced)
1 banana (peeled, sliced)
1 lemon (zest and juice)
Recipe Directions
1. Throw all the ingredients in the blender.
2. Either pour into bowls, crust, or ice cream maker. Enjoy!

She described it as “a beautiful pudding, with a fresh lemon kick, without being tart. The pudding is speckled with the blitzed passion fruit seeds, and looks a little like lemon/poppy seed.”
It really is tasty and truly does look like the color of a gorgeous sunset, if you’re into that sort of thing.
It can be served in bowls as pudding, used as a icing for a raw cake, as a filling in a prepared crust, or frozen as a sorbet.
Please note: I included this in the Kids category, but for children under 1 year, you may want to omit the lemon juice and zest.

This is one of my fave rawcipes. Miss Giggles is a culinary genius... look out raw world if she ever decides to make recipe making a career!

I'm in New York. Not much access to passion fruits. Any good ideas for a substitute? I could probably just omit entirely, and it would be good. Also, some nut milk pulp would be a good thickener.
