Ingredients
Spaghetti Squash, Grate
Rutabaga, Grate
Turnip, Grate
1 Carrot, Grate
½ cup Raisins
¼ cup Red Onion, Cut Finely
½ Tomato, Cut Anyway
2 tablespoon Olive Oil
1 tablespoon Apple Cider Vinegar
1 teaspoon Cumin
10-15 Parsley Leaves
½ cup Pumpkin Seeds, Soaked Overnight
Recipe Directions
You can use as much spaghetti squash, rutabaga and turnip as you want but I usually use a quarter of each. I grate all three of them (though with the spaghetti squash it works better if you dig it out with a strong fork) finely and then add the other ingredients and toss thoroughly. It is a wonderful treat after a hard workout. I hope you enjoy it. :)
