Yield
1 Generous Portion
Ingredients
1/4 cup dry pumpkin seeds soaked
1 small summer squash
1/4 raisins (soaked)
1 small handful of spinach (1.5 oz.) (maybe 1/2 cup)
2 tsp. olive oil
1 tsp. cumin
1/4 tsp. curry powder
1/8 tsp. sea salt
1/16 tsp. ginger powder
sprinkle of onion powder and tabasco
Recipe Directions
Put pumpkin seeds in food processor and chop well then add Olive oil and puree it as to make a thick sauce.
Add summer squash chopped up along with soaked raisins and spinach. Process that up for a good amount of time to truly make it smooth and nut butter consistency.
After that is done put in bowl and stir in spices very well.
Serve with carrot sticks, celery stalks, or whatever other raw veggies you please.
WhiteApple's Thoughts
By WhiteAppleI really like Pumpkin seeds and they have lots of vitamins and minerals like Iron (which I have worried about going raw) so everyday I soak some for the next day for something either smoothie or cereal then I experimented with this after seeing a raw sesame dip video and just made it up as I went. This recipe was my 2nd attempt at and it turned out better than my first (no oil, raisins or spinach in it)
