1 cup cashews (unsoaked)

3/4 to 1 cup of unsweetened coconut flakes (AKA dried coconut)

The juice of one medium lemon (2-3 tablespoons)

1 tablespoon agave nectar or maple syrup (you could use honey but they won't dehydrate as well since honey won't solidify at low raw temperatures)

Directions

1. Process the cashews in a food processer until they resemble coarse flour.

2. Add the coconut and process again until very well mixed.

3. Add the lemon and the sweetener. Process again until resembling dough. (If it's a bit too wet, add more coconut. If it's a bit dry, add a tiny bit of water.)

4. Shape into cookies and dehydrate for 8 hours for a nice, moist cookie. Eat right away and refrigerate leftovers. Dehydrate for longer if you want to store them for a longer shelf life.

Raw lemon cookie recipes were on the top of my list of recipes to make when I recently received my new dehydrator.

Once again, this is a delightfully simple recipe that only contains four ingredients: cashews,  unsweetened coconut, a lemon, and a sweetener like honey or agave nectar.

These cookies have a sweet, simple, creamy flavour and you'll be amazed at how much lemon flavour comes from just one lemon. This is a small recipe, which is perfect for sampling. Try a small batch and see how you like these raw lemon coconut cookies.

I love their simple, satisfying sweet lemony flavour.

Do you have a dehydrator? Even if you don't, I bet you could roll these into balls and refrigerate them. They'd still be good.

these were soooo good! my 2 year old twins loved them too (but I think I ate too many!!!)

Hey there! I wanted to thank you for sharing your recipe! I made it yesterday and added cinnamon on top - so yummy. Have you ever made them with vanilla extract in them? I think that would be good.

Ok, so raw foodies eat cashews evidently, everywhere on the internet its common, but they aren't really raw are they?

When I soak my cashews they start sprouting, so they are living which is the same as raw........right? Or am I missing something?

Yep, if they sprout they're alive!

I am new to eating raw but converting in a gradual but definitely increasing my raw food percentage.

I want to make these cookies but I have a sensitivity to coconut. What can I substitute for the coconut?

Hmmm... I am not sure! This recipe is kind of integral re: coconut. Perhaps you could try to omit the coconut and simply replace with more cashews? I haven't tried this, though...

Holy Cow! Just found and made these. They are FABULOUS!! I didn't have any coconut on hand so I substituted gluten-free oats. Also, just shaped and put into freezer for a little while and ate them cold! I did end up baking some of them, too, at low temp since I don't have a dehydrator yet, for my kiddos (so not really raw I guess) and they were great, too!

Just wanted to add that I understand that oats aren't really considered raw, but I'm just starting out on this raw diet stuff and I'm in a transitioning process. :-)

Wow,  AWESOME idea about adding the LAVENDER!! You get a gold star because I absolutely love the concept of lemon/lavender combo.

I will definitely have to do the same when lavender comes into season. (Um.... when does lavender come into season?)

The first time I made these as per your recipe and they were great!

Then the coconut-ness of them made me start thinking of one of my favorite Christmas time cookies, coconut macaron kisses......so today I made a double batch of these only I substituted orange juice for the lemon and added a little almond extract. Then to try and duplicate the flavor of a hershey kiss of top of the SAD version I dipped these raw beauties into my favorite raw chocolate genache....YUM!

My husband and kids all love these too, even before I had dipped them in the chocolate this evening we had all snuck some out of the dehydrator to snack on :o)

I made these when I was famished this afternoon. I had trouble not eating all the dough before putting them in the dehydrator. I was left with 16 tablespoon sized cookies! I had to add a tablespoon extra to the agave, because I believe I used a large lemon. Thanks for the recipe. :)

I made these cookies and they are very good. I made lots of your recipes and they are very good. I want to ask you something about storing them. I am planning to bring some of the cookies and crackers to church as refreshments and I need to make lots of them. Do you think I need to keep them in the freezer, refrigerator or just in the pantry. Also do you think I should store them in glass, plastic or paper container for them to last longer.

They won't keep "fresh" very long. So... if you are making them a couple of days in advance or less you are probably fine keeping them in pantry

I don't think storing them in different containers will make much of a difference.

If you are going to keep them for much longer than 2 days then you should probably freeze them - but do a test batch first cause I'm not sure how well they will thaw out

Hi, you mention using honey, I am under the impression that these are thought of as vegan cookies, no? I thought honey wasn't considered a vegan product... I'm new at this, so please clarify, thanks!

You are correct. Honey is not vegan since it comes from animals. You can use maple syrup or agave nectar instead.

have just popped my first batch into the dryer - made with manderin juice instead, and a full thumb of juiced ginger! Wanting a raw ginger cookie. will let you know how they turn out, although the mixture tasted great!

I usually dehydrate on high for one hour then reduce to 105 degrees for the remaining time

hi Melissa, you can soak them if you want but dry them before using. I do not soak in this recipe
