Recipe Directions

  • 1. Process the cashews in a food processer until they resemble coarse flour.
  • 2. Add the coconut and process again until very well mixed.
  • 3. Add the lemon and the sweetener. Process again until resembling dough. (If it's a bit too wet, add more coconut. If it's a bit dry, add a tiny bit of water.)
  • 4. Shape into cookies and dehydrate for 8 hours for a nice, moist cookie. Eat right away and refrigerate leftovers. Dehydrate for longer if you want to store them for a longer shelf life.

The Rawtarian's Thoughts

By The Rawtarian

Raw lemon cookie recipes were on the top of my list of recipes to make when I recently received my new dehydrator.

Once again, this is a delightfully simple recipe that only contains four ingredients: cashews,  unsweetened coconut, a lemon, and a sweetener like maple syrup or agave nectar.  (Do not use honey since it doesn't dehydrate.)

These cookies have a sweet, simple, creamy flavour and you'll be amazed at how much lemon flavour comes from just one lemon. This is a small recipe, which is perfect for sampling. Try a small batch and see how you like these raw lemon coconut cookies.

Note: this batter is very moist, so you definitely have to dehydrate these little guys!

I love their simple, satisfying sweet lemony flavour.

When I soak my cashews they start sprouting, so they are living which is the same as raw........right? Or am I missing something?

Hey there! I wanted to thank you for sharing your recipe! I made it yesterday and added cinnamon on top - so yummy. Have you ever made them with vanilla extract in them? I think that would be good.

I posted here w/step by step photos (and gave you credit of course): http://www.joyfulabode.com/2010/02/28/what-to-do-with-lemons-raw-lemon-cookie-recipe/

Wow. Those lemon cookies look delicious! I have a dehydrator, so I'll definitely be making these as soon as I stock up on cashews again!

Lol, but they're raw, so you can never eat too many :)

If you try them, be sure to tell me what you think! I just love them. And they're pretty easy!

Do you have a dehydrator? Even if you don't, I bet you could roll these into balls and refrigerate them. They'd still be good.

Hi
I don't have a dehydrator, so what can I do instead?

Thanks

Hi Julie, try making my "lemon bars" instead - a dehydrator is not required for that one

Hi Laura-Jane,
I made your cookies (with a few changes of my own) for two friends celebrating birthdays and they were a big hit! Yummy, Thank you!
PS...my website is under construction because I am on sabbatical but will be returning to work with a raw aspect soon.
Thank you again,
Afia

So glad your friends liked 'em! Yeah, these ones are good. So simple but I love their fluffy lemonyness. Warmth and wishing you a productive and perhaps also relaxing sabbatical!!!
