Yieldmakes two 12-15 oz mugs
2 whole collards
½ cup soaked sunflower seeds
2 tablespoon flax oil
½ cup frozen blueberries
2 stalks celery
2 handfuls mint leaves
water and ice to preferred consistency
Throw ingredients in high-speed blender, whir, and enjoy!

A wonderful, refreshing smoothie for those who are in the mood for something that’s not too sweet. (You can add more blueberries and/or sweetener if you want a fruitier one.). My husband recently had a weekend smoothie extravaganza, and this was my favorite creation.
The blueberries cut the bitterness of the collards and make a really neutral shake when you are in the mood to have something light but not two sweet and not savory like a soup or blended salad. I like to have this frosty cold for breakfast on the way to work at 5:30am. Like a dip in a mountain spring! It has more of a blue cast after you add the berries…
