  • 1. Slice your mushrooms.
  • 2. Place sliced mushrooms into a wide, shallow bowl (or even a plate with a deep lip).
  • 3. Pour the oil and soy sauce over the mushrooms.
  • 4. Gently stir the mushrooms so that they get lightly covered in the oil and soy sauce.
  • 5. Let the mushrooms sit for approximately 5 minutes.

Needing something more than a "salad" but in a rush? Try these simple marinated mushrooms. Ready in less than 5 minutes and they have a real cooked feel.

I have eaten raw marinated mushrooms on their own, but I love them combined with spinach as salad toppers. In this photograph I've placed the marinated mushrooms on a bed of spinach and garnished with sesame seeds and sliced green onion. But for you the opportunities are endless.

Again, the marinated mushrooms provide a nice hearty substance to a salad, and they are super quick to prepare.

I personally prefer my marinated mushrooms eaten fresh right after I make them.

this is really good. i have done this many times with my portabella muchrooms,but when i saw this recipe i was shocked because i never thought someone else would do this..lol i guess great minds think alike..i like to sprinkle chopped marinated mushrooms on my mushroom soup...yummy..made me hungry..thats what i will have for lunch

I'm new to the Raw way of eating; however, I have lost 23 lbs. in the last two weeks, off my insulin (4 shots/day) and blood pressure meds. However, I am going into my third week and found I am getting bored with the same old meals I have been preparing I was afraid I might slip into my old way of unhealthy eating. Delicious! I marinated the mushrooms with some seedless cucumber and tossed them in a spinach salad with sprouts and sesame seeds. Kind of a combo of the raw asian cucumber salad and the marinated mushrooms.

Love these. A lot. Made them last night for the first time, but then craved them again this morning so I had more! I added some garlic to the marinating mixture. Super tasty.

So yummy and easy, thanks! I made a quick salad with diced tomato and avocado, sprinkled with lemon juice and sea salt, then added the mushrooms. My family loved it and my 13 yr. old son wanted some to pack in his lunch the next day. I also made some in the morning at work and shared with a co-worker who loved it as well.
