Large bunch of dandelion greens (stems removed, chopped)
2 apples (cored, chopped)
½ red onion (thinly sliced)
1 cup raw tahini
1 cup fresh orange juice
2 tablespoons dulse flakes
1 tablespoon ginger root (grated)
½ teaspoon cinnamon
½ teaspoon curry powder
Pinch of salt
1. In a large salad bowl, combine dandelion, apples, and onion.
2. Blend remaining ingredients in blender until smooth.
3. Pour dressing over and toss gently.
4. Allow salad to marinate at least 10 minutes, or up to 2 hours.

This recipe is absolutely amazing, and the bitterness of the dandelion greens is beautifully countered by the sweetness of the apples and creaminess of the dressing.
Make sure to use a very large bunch of dandelions (I used about 5 plants, and wished I’d had more).
